Aromatically, “The Glutton” is driven by Black Cherry, savory minerality, cured meat and bay leaf. The Petite Sirah contributes warm cinnamon spice and darker fruit notes to the nose as well. On the palate, this vintage is dominated by raspberry preserves and cocoa flavors with some lingering sweetness from French Oak tannins, which frames this savory wine beautifully.
Bordered by the Estrella river in Paso Robles, Tolliver Ranch features well-drained, sandy-gravely soils that are acidic due to the presence of decomposed granite, unlike most soil profiles in the Paso Robles region. Conditions at the site are ideal for big red varietals such as Petite Sirah, Syrah and Cabernet which thrive in the vineyard’s soils, and utilize the long growing season. The combination of terroir and a slow and steady growing ripening season builds complexity of flavors in the wine.
